New IFST Information Statement on food allergy

The UK-based Institute of Food Science and Technology (IFST) has published a new Information Statement relating to food allergy and the problem of controlling food allergens in food manufacturing.

The Statement includes useful background information on food allergies and specific guidance on regulation of allergens in foods and the responsibilities of food manufacturers. It also deals with precautionary labelling, quantifying food allergens and practical measures to minimise ‘cross-contact’ allergen problems.
