New IFST Information Statement on foodborne viruses

PHIL_2739_loresThe UK-based Institute of Food Science and Technology (IFST) has published a new Information Statement covering foodborne viral infections caused by noroviruses and the Hepatitis A virus.

The Statement provides a scientific overview of foodborne viral infections and covers the characteristics of both viruses, including their sources, symptoms of infection and detection methods. It also details the routes by which food contamination may occur.

Hygiene and control measures and good industry practice designed to reduce the risk of foodborne virus transmission are described, but the authors raise concerns that the current hygiene guidelines are either not validated against viruses, or are ineffective against them.
